How to Make Old Fashion Potato Dishes like the grandmother to
The potato is one of my favorite vegetables and imagine my surprise when I learned to eat potatoes is more difficult of my blood sugar is sugar. I hate to be diabetic, but have learned to work reasonably potatoes in my diet. Here are three recipes old fashion with potatoes that are sure to please the "tators" person in your home. Country fries, hash Old Fashion Brown potatoes and creamed peas and potatoes are great recipes.
Aunt Audrey CREAM potatoes and peas
This recipe is from my childhood. My late Aunt Audrey to make this delicious dish. For diabetics out there, the milk and cheese in this recipe makes is fine with us.
6 medium potatoes, peeled and cubed
3 cups frozen peas
White Sauce:
1 tablespoon margarine
1 tablespoon flour
1 / 4 teaspoon salt
1 / 8 teaspoon pepper
1 cup milk
Velveeta cheese
Slow cook potatoes in boiling salted water for 20 minutes. Boil the peas for 3 to 5 minutes until tender. Drain the potatoes and peas. Butter the bottom and sides of baking dish. Layer potatoes and peas in the dish – potatoes, peas, potatoes, peas.
Make white sauce: Melt margarine in a small saucepan, add flour, salt and pepper and mix with soft while heating over low heat. Stir in the milk, stirring until soft, about 1 minute. Add a slice of Velveeta cheese, the amount to your taste, and stir over low heat until cheese is melted and mixture is smooth. Pour the mixture over the peas and potatoes in the dish with butter.
Country fried potatoes
An old family recipe.
1 / 4 cup fat (bacon drip of preference)
2 quarts peeled and sliced potatoes
small and one medium onion, chopped
1 / 2 cup chopped green pepper
1 / 2 teaspoon garlic powder
Salt to taste
Pepper to taste
Heat the butter in a large cast iron skillet. When hot, add vegetables and condiments. Stir in seasoning mix. Reduce heat to medium and cook until vegetables are tender and golden in accordance with their wishes. Stir occasionally to brown.
OLD FASHION POTATO BROWN HASHED
1 1 / 2 pounds (about 4 medium) baking potatoes, peeled and cut into strips
2 tablespoons grated onion
3 / 4 teaspoon salt
1 / 8 teaspoon pepper
3 tablespoons butter flavor shortening
Rinse and drain the potatoes well. In a medium bowl, combine potatoes, onion, salt and pepper. Mix well. In a large skillet, melt the butter. Add potato mixture to the pan and into out evenly. Cook over medium-high heat for 13 to 15 minutes or until golden and tender. Using a spatula, turn the potatoes after about 6 to 8 minutes.
Yield: 4 to 6 servings
